Where it all started! Located in Park Slope, our neighborhood bakery and cafe is open 365 days a year. On March 9th, 2020 we opened our doors a few days before the pandemic. Dedicated to providing the community with everyday needs that bring joy any time of the day, it has drawn a loyal following that has extended beyond its zip code.

Cantillon 'Gueuze' Lambic (multiple vintages)
Gueuze is the ultimate result of a complex blend of lambics of different ages and with different tastes kept in oak barrels. The brewer’s main task involves tasting and he or she will have to try around a dozen lambics from different barrels, finally selecting five or six. It is by this method that gueuze 100% lambic, presenting the typical characteristics of Cantillon Brewery’s beers, is produced. Each blended batch yields a slightly different gueuze because the natural elements at the heart of the beer make it impossible to produce a standardised product.

Cantillon 'Rosé de Gambrinus' Raspberry Lambic (multiple vintages)
The raspberries are from Serbia and the fruit is blended with lambic that is on average 20 months old, the proportion being 200 g of fruit per litre of beer. Since raspberries are delicate it is necessary to select a lambic that is both mellow and subtle so that it will be a good match for the fruit. After soaking for two to three months, the lambic has extracted the full colours, fragrances and flavours of the raspberries. At that point it is blended with one-year-old lambic, which contributes the sugars necessary for secondary fermentation in the bottle. We only use fresh fruit and, as is the case for wine, Cantillon beers can be referred to in terms of vintages. Prevailing weather conditions have a major impact on the ripeness and quality of the fruit, and this is why the taste of the brewery’s fruit-based beers will differ slightly from one year to the next.

Cantillon 'Iris' Lambic (vintage 2021)
It is a completely original beer which, contrary to the other products of the Brewery, is not brewed with 35% of wheat. The Iris, which is only made with malt of the pale ale type (giving a more amber colour to the beer) conserves the typical flavour of the spontaneous fermentation, the complex aromas and the vinous taste. The hopping is different too. Lambic is made with 100% dried hops, for the Iris we use 50% of dried hops and 50% of fresh hops. The latter cause a superb acidity, the former, due to their tannins, enable to conserve the beer while preserving all its qualities. After two years in the barrel, the Iris undergoes a second fresh hopping two weeks before the bottling. A linen bag, filled with hops, is soaked in the beer for two weeks. This technique, called "cold hopping", gives the beer a more intense savour and makes the smell and the taste more bitter. Iris is brewed only once every season and all the beers come from the same brewing. This is why the beer is dated. The second fermentation is obtained by adding liquor. Although it is a spontaneous fermentation beer, the Iris is very different from the Lambic. The amber colour and the bitter and slightly caramelized taste make it a complex beer.

Cantillon 'Grand Cru Bruocsella' Lambic (vintage 2021)
Lambic Grand Cru Bruocsella Cantillon is a Lambic matured for three years in oak barrels and selected for its exceptional qualities of color, bouquet and aromas. From its golden yellow, luminous, slightly amber hue, its aroma of mixed apple and honey, the Grand Cru Bruocsella draws its main powers of seduction. Its taste qualities are due to its raw character, its almost imperceptible sweet acidity. Its long shelf life gives its bouquet fine nuances of toast which, according to some, resembles the white Burgundian grape variety "Chardonnay".

Cantillon 'Cuvée Saint Gilloise' Lambic (vintage 2021)
In order to preserve the delicacy of the hops, the lambics chosen for the production of the Cuvée Saint-Gilloise are elegant and very fine in order to preserve the acidity/bitterness balance. Given that there is no blending with young Lambic as for Gueuze and no addition of fructose as for fruit beers, the second fermentation in the bottle of the Cuvée Saint-Gilloise is due to an addition liquid sucrose.

Cantillon 'Nath' Lambic (Vintage 2021)
Blend of rhubarb with one- and two-year-old Lambics. Beer with a tangy and fruity taste. A slight astringency accentuates its subtlety and its end note. A good beer to age, as its taste evolves over time.

Cantillon 'Kriek' Lambic (vintage 2021)
Our sour cherries, which are certified organic, come from Turkey. The fruit is blended with lambic that is on average 20 months old, the proportion being 200 g of fruit per litre of beer. Since sour cherries have a very pronounced taste it is necessary to select a lambic that has enough character so that it will be a good match for the fruit. After soaking for two to three months, the lambic has extracted the full colours, fragrances and flavours of the sour cherries. At that point it is blended with one-year-old lambic, which contributes the sugars necessary for secondary fermentation in the bottle.

Cantillon 'Fou' Founne' Lambic (Vintage 2021)
Blend of lambics aged 18 to 20 months and of Bergeron apricots. Very fragrant gourmet beer which perfectly brings across the flavours of Bergeron apricots.The apricots are sourced from environmentally-friendly and sustainable agriculture. The proportion is 300 g of fruit blended with one litre of lambic, and the soaking time is very short. Specifically, it will only take around five weeks for the lambic to extract the fragrances and flavours of the fruit. It is worthwhile to note that Fou’Foune kicks off the bottling season around the end of August. Given its success, Fou’Foune has taken up third place among the fruit beers in terms of volume, behind the traditional kriek and Rosé de Gambrinus.
